  • 1 cup broccoli florets Choose vegetables based on availability and preference.
  • 1 cup carrots, sliced Feel free to mix in different veggies.
  • 2 cups rice Jasmine rice works well.
  • 2 tbsp olive oil Used for cooking chicken and vegetables.

Method
 

Preparation
  1. Rinse the rice under cold water to remove excess starch, then cook according to package instructions until fluffy.
  2. Heat olive oil in a large pan over medium heat until it shimmers.
  3. Add diced chicken breast to the pan, seasoning with salt and pepper. Cook until browned, about 5-7 minutes.
  4. Add diced bell pepper, broccoli florets, and sliced carrots. Stir-fry until tender but still crisp, about 5-6 minutes.
  5. Pour sweet chili sauce over the chicken and vegetables, stirring to coat evenly, and let simmer for a couple of minutes.
  6. Plate the chicken and vegetable mixture over the fluffy rice and enjoy.
