  • 1/8 teaspoon salt
  • 2-3 cloves garlic (pressed or minced) Enhances flavor; can use garlic powder if fresh isn’t available.
  • 3 large eggs Cold eggs are easier to separate.
  • 1/4 teaspoon cream of tartar Stabilizes egg whites for better rise.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine the ricotta cheese, salt, and minced garlic. Stir until smooth.
  3. Separate the egg yolks from the whites, placing yolks in the ricotta mixture and mixing well.
  4. In another bowl, beat the egg whites with cream of tartar until stiff peaks form.
  5. Gently fold the whipped egg whites into the ricotta mixture without deflating.
  6. Line your baking sheets with parchment paper and drop the mixture onto the sheets, forming round shapes.
  7. Bake for about 30 minutes, or until the tops are golden brown.
  8. Allow the bread to cool slightly before serving.
