  • 2 cups all-purpose flour Can substitute with gluten-free baking blend.
  • 1 cup melted butter Melted, but not too hot.
  • 1/2 cup pecans, chopped Can substitute with other nuts or omit.
  • 1/4 cup granulated sugar For added sweetness in the crust.
For the Cream Cheese Layer
  • 16 ounces cream cheese, softened Room temperature for smooth mixing.
  • 1 cup powdered sugar To sweeten the layer.
For the Lemon Pudding Layer
  • Juice from 1 lemon Fresh juice is recommended.
  • 2 packages instant lemon pudding mix (3.4 ounces each) Can substitute with homemade lemon pudding if needed.
  • 2 cups milk Use cold milk for thickening.
For Topping
  • 8 ounces whipped topping Use a spatula for decorative swirls.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine all-purpose flour, melted butter, chopped pecans, and granulated sugar. Mix until thoroughly combined.
  3. Press the mixture into the bottom of a greased 9x13-inch baking dish and bake for about 20 minutes, until golden brown.
  4. In another bowl, beat together softened cream cheese and powdered sugar until smooth, then spread over the cooled crust.
  5. In a separate bowl, whisk together instant lemon pudding mix and milk until thickened, then layer over the cream cheese layer.
  6. Spread whipped topping over the lemon pudding.
  7. Refrigerate for at least one hour before serving to allow the layers to set.
