For the Chicken Skewers
  • 1 pound chicken breast, cut into cubes Thighs can be used for more moisture.
  • 2 tablespoons olive oil Can substitute canola oil or avocado oil.
  • 2 cloves garlic, minced Brings flavor; can use fresh herbs.
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano Feel free to use fresh herbs.
  • Salt and pepper to taste
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes.

Method
 

Preparation
  1. Preheat your grill to medium-high heat (between 375°F to 450°F).
  2. Combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a mixing bowl.
  3. Add cubed chicken to the marinade and toss to coat. Let marinate in the refrigerator for at least 30 minutes.
  4. Thread the marinated chicken onto skewers, leaving space between pieces.
Cooking
  1. Place the skewers on the grill and cook for about 5-7 minutes on each side until golden brown and chicken reaches an internal temperature of 165°F.
  2. Remove from the grill and let rest for a couple of minutes before serving.

Notes
