Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, mix the brown sugar, honey (or maple syrup), peanut butter, and egg (or flax egg) until the mixture is smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Fold in chocolate chips or dried fruit, if using.
  6. Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
