Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt until well combined.
- In another bowl, mix the brown sugar, honey (or maple syrup), peanut butter, and egg (or flax egg) until the mixture is smooth.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in chocolate chips or dried fruit, if using.
- Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
Baking
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
