  • 1 cup Strawberries Use fresh and ripe for best flavor.
  • 1 medium Kiwi Peeled and sliced.
  • 2 tablespoons Toasted Coconut Flakes Adds a crunchy texture.
  • 5 leaves Fresh Mint Leaves For garnish and fresh flavor.

Method
 

Preparation
  1. In a bowl, combine the chia seeds with almond milk and stir well, ensuring the seeds are fully submerged. Let sit for at least 30 minutes or overnight for best results.
  2. Once the chia seeds have absorbed the almond milk, add the maple syrup and stir thoroughly until well combined.
  3. Wash and slice the strawberries and peel and slice the kiwi in preparation.
  4. In serving glasses, layer the chia pudding at the bottom, followed by a layer of sliced strawberries, and then add kiwi slices on top.
  5. Sprinkle toasted coconut flakes and place fresh mint leaves on top of each glass.
  6. Refrigerate the assembled puddings for at least 30 minutes before serving.
