- In a bowl, combine the chia seeds with almond milk and stir well, ensuring the seeds are fully submerged. Let sit for at least 30 minutes or overnight for best results.
- Once the chia seeds have absorbed the almond milk, add the maple syrup and stir thoroughly until well combined.
- Wash and slice the strawberries and peel and slice the kiwi in preparation.
- In serving glasses, layer the chia pudding at the bottom, followed by a layer of sliced strawberries, and then add kiwi slices on top.
- Sprinkle toasted coconut flakes and place fresh mint leaves on top of each glass.
- Refrigerate the assembled puddings for at least 30 minutes before serving.
