  • 2 pieces carrots, sliced

Method
 

Preparation
  1. In a large pot, heat about 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes.
  3. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon.
  4. Stir in the chopped cabbage, sliced carrots, diced tomatoes (with their juice), beef broth, oregano, salt, and pepper.
  5. Let the mixture come to a boil, then reduce the heat and simmer for 20-25 minutes until the vegetables are tender.
  6. Serve hot, optionally garnished with crusty bread or a sprinkle of Parmesan cheese.
