Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a bowl, beat the eggs. In another bowl, mix breadcrumbs and Parmesan cheese.
- Dip each chicken breast in the egg, then coat with the breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 4-5 minutes per side.
- Transfer chicken to a baking dish. Top each piece with marinara sauce and shredded mozzarella.
- Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
