Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a bowl, beat the eggs. In another bowl, mix breadcrumbs and Parmesan cheese.
  4. Dip each chicken breast in the egg, then coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 4-5 minutes per side.
  2. Transfer chicken to a baking dish. Top each piece with marinara sauce and shredded mozzarella.
  3. Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
