  • 1/2 cup unsalted butter, softened Room temperature for easy mixing.
  • 1 cup packed brown sugar Provides chewy texture.
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt Reduce if using salted butter.
  • 1 cup chopped walnuts Optional; adds crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter and brown sugar together until it’s light and fluffy, about 2–3 minutes.
  3. Add the beaten egg and vanilla extract to the butter-sugar mixture. Mix until fully combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Fold in walnuts (if using).
  7. On a lightly floured surface, divide the dough into three 10x1-inch rolls.
  8. Wrap each roll tightly in waxed paper and freeze for at least 12 hours.
  9. Slice the frozen dough into ⅜-inch rounds. Place them on greased baking sheets.
  10. Bake for 6–8 minutes until the edges are set.
  11. Allow the cookies to cool on a wire rack before serving.
