Preparation
- Preheat your skillet over medium heat.
- Brush one side of a tortilla with olive oil and place it in the skillet, oil side down.
- Sprinkle shredded cheese over one half of the tortilla.
- Add sliced bell peppers and onions on top of the cheese.
- Fold the tortilla over and cook for 2-3 minutes until the bottom is golden.
- Carefully flip the quesadilla and cook the other side until golden.
- Remove from the skillet, slice into wedges, and serve warm.
