  • 4 pieces Flour tortillas Feel free to opt for whole wheat, corn, or gluten-free tortillas.
  • 2 cups Shredded cheese (cheddar, mozzarella, or your choice) Cheddar and mozzarella are recommended for melting, but feel free to experiment.
  • 1 cup Bell peppers (sliced) You can substitute with spinach, mushrooms, or roasted vegetables.
  • 1 cup Onions (sliced) Fresh or sautéed depending on your preference.
  • 2 tablespoons Olive oil Used to brush the tortillas for cooking.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.

Method
 

Preparation
  1. Preheat your skillet over medium heat.
  2. Brush one side of a tortilla with olive oil and place it in the skillet, oil side down.
  3. Sprinkle shredded cheese over one half of the tortilla.
  4. Add sliced bell peppers and onions on top of the cheese.
  5. Fold the tortilla over and cook for 2-3 minutes until the bottom is golden.
  6. Carefully flip the quesadilla and cook the other side until golden.
  7. Remove from the skillet, slice into wedges, and serve warm.
