- Char the sweet corn in a large skillet or on a grill until charred, about 5-7 minutes over medium heat.
- In a large mixing bowl, gently combine the charred corn, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
- Drizzle lime juice and olive oil (if using) over the mixture.
- Season with salt and pepper to taste.
- Carefully toss all the ingredients until well mixed.
- Serve immediately or chill in the refrigerator for 15-30 minutes to let flavors meld.
