  • 1 ripe avocado, diced A ripe avocado adds creaminess.
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped For a milder flavor, consider using green onions.
  • 1/4 cup fresh cilantro, chopped
  • 1 lime Juice of 1 lime The acidity helps keep the avocado from browning.
  • Salt and pepper to taste Taste as you season.
  • Olive oil (optional)

Method
 

Preparation
  1. Char the sweet corn in a large skillet or on a grill until charred, about 5-7 minutes over medium heat.
  2. In a large mixing bowl, gently combine the charred corn, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  3. Drizzle lime juice and olive oil (if using) over the mixture.
  4. Season with salt and pepper to taste.
  5. Carefully toss all the ingredients until well mixed.
  6. Serve immediately or chill in the refrigerator for 15-30 minutes to let flavors meld.

Notes
