  • 1 tablespoon sugar Used to activate the yeast.
  • 4 cups all-purpose flour For a gluten-free version, use a 1:1 gluten-free flour blend.
  • 1 teaspoon salt
  • 0.25 cup baking soda Essential for achieving distinct pretzel flavor.
  • 1 large egg For egg wash.
  • Coarse sea salt For sprinkling on top.

Preparation
  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Stir in flour and salt until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover it with a cloth, and let it rise for about an hour or until doubled in size.
  5. Preheat your oven to 450°F (230°C).
  6. Roll the dough into small bite-sized pieces.
  7. In a large pot, bring 10 cups of water and baking soda to a boil.
  8. Boil the pretzel bites for 30 seconds, then remove and place them on a baking sheet.
  9. Brush with egg wash and sprinkle with coarse sea salt.
  10. Bake for 12-15 minutes or until golden brown.
