Alaska Pollock Caribbean-Style   



Ingredients :
1/4cupthinly-sliced onion
1/4cupthinly-sliced green pepper
1xgarlic clove minced
2tblbutter or margarine
1lbpollock fillets thawed if necessary
1/8tspsalt
1dshfreshly-ground black pepper
1canstewed tomatoes - (8 oz)
2tbllime juice

How to cook :


Saute onion, green pepper and garlic in butter; remove from skillet and set aside.
Place pollock in skillet; season with salt and pepper.
Spoon tomatoes and sauteed vegetables over fillets.
Sprinkle with lime juice.
Bring to a boil; simmer, covered, 5 minutes or until fish flakes easily when tested with a fork.
This recipe yields 4 servings.
