Company Crab Cakes   



Ingredients :
4tblMelted butter
2tblParmesan cheese, grated
1tspDry mustard
1tspSeafood seasoning
1/2tspSalt
1/4tspBlack pepper
1/8tspGround nutmeg
1/4cupFinely chopped onions
1/4cupFinely chopped sweet red peppers
2tblFinely chopped cilantro
1/2cupSoft bread crumbs
1lbFresh crab meat, drained and flaked
2xEgg yolks, beaten
1/2cupFlour
Vegetable oil

How to cook :


Combine first 11 ingredients and stir well.
Blend in crab meat and egg yolks.
Shape in 8 patties. Dredge in flour. Heat oil to 375 degrees.
Fry crab cakes in oil until golden.
Serve with cocktail sauce and/or tarter sauce.
Yield: 8 servings.
