7-Grain Oatmeal Cake   

Ingredients :
		CREAM TOGETHER:
1	cup	AM Canola Oil
2	cup	Maple syrup
1 1/2	tsp	Vanilla MIX TILL SMOOTH:
2	cup	AM Unbleached White Flour
3/8	cup	AM Soy Flour
1/2	cup	Cold water
1/2	cup	Soy milk
1 1/2	tsp	Grated lemon rind
1 1/2	tsp	Sea salt (optional)
3	x	Egg whites
2	tsp	Cinnamon
2	tsp	Non-alum baking powder MIX THE ABOVE 2 MIXTURES TOGETHER AND ADD:
1	cup	Cooked AM 7 Grain Cereal
5	cup	AM rolled Oats
1/2	cup	Raisins (optional)
1/2	cup	Chopped nuts

How to cook :

Mix well and fill oiled cake pan 3/4 full.
Bake 350 F. until light golden brown.
This is not a very sweet cake.
May be served with apple butter, honey, etc.
