Ambrosia Pancakes   



Ingredients :
1/2cuppancake mix, more if needed to achieve desired thickness
1/2cupskim milk or water
1/2cuporange juice
4xegg whites
1tsporange extract
1/2cupflake coconut
1tspgrated orange zest
1 1/2cupsyrup
1medorange, peeled, seeded and diced

How to cook :


Combine pancake mix, milk or water, orange juice, egg whites and extract, until just moistened.
Stir in coconut and orange zest.
Bake on a greased hot griddle, using 1 tablespoon of batter for miniature pancakes, more for standard pancakes.
Keep warm until ready to serve.
Combine syrup and diced oranges.
Heat and serve warm with pancakes.
