20-Minute White Bean Chili   



Ingredients :
1cupchopped onions
1xclove garlic minced
1tblvegetable oil
1lbground turkey
1cupchicken broth or lower sodium chicken
broth
1x14 1/2-ounce can stewed tomatoes
1/3cupGrey Poupon Dijon Mustard
1tblchili powder
1/8tspground red pepper or more
1x15-ounce can cannellini beans drained and rinsed
1x8-ounce can corn drained
Tortilla chips
Shredded Cheddar cheese
Cilantro fresh, chopped, optional

How to cook :


1. In 3-quart saucepan, over medium-high heat, sautee onions and garlic in oil until tender.
Add turkey; cook until done, stirring occasionally to break up meat.
Drain.2. Stir in chicken broth, tomatoes, mustard, chili powder and pepper.
Heat to a boil; reduce heat.
Simmer for 10 minutes.
Stir in beans and corn; cook for 5 minutes.
Top with tortilla chips, shredded cheese and cilantro if desired.
