Roast Leg of Lamb   



Ingredients :
1/4cupwhite vinegar
1 1/2tspsalt
1tspfreshly-ground black pepper
1tspdry mustard
1xleg of lamb - (4 to 5 lbs) trimmed

How to cook :


Stir together first 4 ingredients in a small bowl.
Rub mixture over lamb, and place in a shallow roasting pan.
Bake lamb at 425 degrees for 45 minutes; reduce oven temperature to 375 degrees, and bake 20 minutes or until a meat thermometer inserted into thickest portion registers 155 degrees.
Let lamb stand for 20 minutes before serving.
This recipe yields 8 to 10 servings.
Comments: Leftover lamb slices are great for quick and tasty sandwiches.
