Roast Chicken

| 1 | x | Chicken - (3 1/2 to 4 lbs) |
| Goose fat | ||
| Salt to taste | ||
| Freshly-ground black pepper to taste | ||
How to cook :
Preheat oven to 350 degrees.
Rub chicken with goose fat, salt and pepper.
Place chicken, breast-side down on a rack in a roasting pan.
Roast 30 minutes, turn over and roast for an additional 20 to 30 minutes, basting occasionally, or until the juices run clear.
This recipe yields 4 servings.
