Barbara Billingsley's "Sweet Potato Casserole"   

Ingredients :
4	lb	Cooked yams
1/2	cup	Butter, melted
3	x	Eggs, slightly beaten
2/3	cup	Orange juice
1/3	cup	Brown sugar, packed
1/4	cup	Brandy
1	tbl	Grated lemon peel
1	tsp	Cinnamon
1/2	tsp	Salt

How to cook :

Beat cooked yams with electric mixer, adding melted butter - add remaining ingredients and beat until smooth - butter a 2 quart casserole and spoon in the mixture - bake at 350 degrees for 45 minutes or until set.
