12th Street Cantina Chipotle Maple Barbecue Sauce   



Ingredients :
2tblvegetable oil
1medonion (4 ounces), diced
4clvgarlic, peeled, minced
1cupancho chili puree
1cupNew Mexican chili puree
5cuptomato puree
6tblpure maple syrup
2tblchipotle chili puree
3tblminced cilantro
1tspMexican oregano
1tspsalt or to taste

How to cook :


In skillet, heat oil; saute onion and garlic 5 minutes.
Add ancho and New Mexican chile purees; cook 5minutes more.
Add tomato puree, maple syrup and chipotle puree; simmer for 20 minutes.
Add cilantro,oregano and salt to taste.
Use as dip or salsa, or as marinade or basting sauce for chicken or pork.
Makes about 1 quart.carbohydrates, 12 grams; fat, 2grams; cholesterol, none; sodium, 168 milligrams.
