Mache and Beet Salad   

Ingredients :
2	cup	Mache
4	x	White or golden beets cooked, peeled & chopped
1	tsp	Chopped lovage or parsley
2	tbl	Balsamic vinegar
5	tbl	Olive oil
2	x	Eggs, hard-boiled
1/2	cup	Home made croutons

How to cook :

In a salad bowl combine lovage or parsley, vinegar and oil.
Add beets, toss to coat and marinate for 1 hour.
Add mache, toss, garnish with eggs and croutons.
