Asian Noodle Salad

| 1/4 | cup | soy sauce |
| 2 | tbl | seasoned rice vinegar |
| 1 | tbl | Asian sesame oil |
| 1/2 | tsp | dried hot red pepper flakes |
| 1 | x | garlic clove, minced |
| 2 | tsp | grated peeled fresh ginger |
| 3/4 | lb | thin linguine |
| 1 | cup | coarsely shredded carrot |
| 3 | x | scallions, cut crosswise into thirds and thinly sliced lengthwise |
| 2 | tbl | sesame seeds, toasted |
| 6 | x | radishes, halved and thinly sliced |
How to cook :
Stir together soy sauce, vinegar, oil, red pepper flakes, garlic, and ginger.
Cook linguine in a large pot of boiling salted water until just tender, then drain in a colander and rinse under cold water until cool.
Toss with dressing, carrot, scallions, sesame seeds, and radishes in a large bowl.
serves 6 as a side dishCooks' note:o Toast seeds in a dry heavy skillet over moderate heat, stirring until fragrant and a shade or two darker.
Or, toast in a shallow baking pan in a 350 F oven, 5 to 10 minutes.
