Asian Gravlox with Chayote Caviar Salad   



Ingredients :
4stalklemongrass
6xLeaves kaffir lime
1cupShallots
1/2cupGinger, peeled
1/2cupGround, toasted coriander
1/2cupGround, toasted star anise
1/4cupGround, toasted Szechwan peppercorns
1/2cupGround, toasted fennel
1/2cupGround, toasted white peppercorns
2cupKosher salt
2cupSugar
1xSide salmon, skin off

How to cook :


In a food processor, combine first 4 ingredients until pureed.
Add spices then salt and sugar.
Completely coat both sides of the salmon, tightly cover and refrigerate overnight, (minimum of 16 hours).
Thoroughly rub off cure.
Slice very thin on the bias.
