Swiss Cabbage Pie - Ethel Buffington

| 1 | loaf | Unbaked Bread (Can Use Frozen Dough) |
| 1 | lb | Bacon |
| 8 | cup | Cabbage, shredded |
| 1/2 | tsp | Salt |
| 1/4 | tsp | Pepper |
| 3 | x | Eggs, beaten |
| 1 1/2 | cup | Cream Or Half And Half |
| 1/2 | cup | Swiss Cheese, Grated, optional |
How to cook :
* Heat oven to 350 F.
1. Roll out the bread dough about 1/4-inch thick and place it in a 9-inch pie pan.
Crimp edges, as would for a pie.
2. Cut the bacon into small pieces and brown them in a large heavy skillet.
Pour off all but 1 Tbs of grease.
Stir in the shredded cabbage and cook over moderate heat, stirring, for 1 min.
3. Over low heat, add salt and pepper, eggs, cream and the cheese.
Cook for 3 to 4 mins, stirring.
Put mixture in the crust and bake for 30 mins, or until filling is set and the edges are golden brown.
