Angello's Italian Garden

| 3 | oz | diced fresh eggplant |
| 6 | oz | sliced fresh peppers, red, green or yellow |
| 10 | x | snow peas |
| 2 | oz | sliced onions |
| 1/2 | cup | black olives |
| 1 | pch | salt and fresh pepper |
| 4 | oz | olive oil |
| 1 | tbl | fresh minced garlic |
| 1 | tbl | fresh basil, chopped |
| 1/2 | tbl | fresh cilantro, chopped |
| Splash white wine | ||
| 16 | oz | cooked pasta, preferably penne |
| 1/4 | cup | grated Parmesan cheese |
| Fresh parsley, chopped | ||
How to cook :
In a medium-sized frying pan, saute eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four minutes.
Add garlic, basil, cilantro and wine and saute another minute.
Toss with cooked pasta, adding Parmesan cheese.
Sprinkle parsley over top for presentation.
Makes two to three servings.
