Angello's Italian Garden   



Ingredients :
3ozdiced fresh eggplant
6ozsliced fresh peppers, red, green or yellow
10xsnow peas
2ozsliced onions
1/2cupblack olives
1pchsalt and fresh pepper
4ozolive oil
1tblfresh minced garlic
1tblfresh basil, chopped
1/2tblfresh cilantro, chopped
Splash white wine
16ozcooked pasta, preferably penne
1/4cupgrated Parmesan cheese
Fresh parsley, chopped

How to cook :


In a medium-sized frying pan, saute eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four minutes.
Add garlic, basil, cilantro and wine and saute another minute.
Toss with cooked pasta, adding Parmesan cheese.
Sprinkle parsley over top for presentation.
Makes two to three servings.
