Italian-Style Foldovers

| 4 | x | cloves garlic, pressed or minced |
| 1 | med | green or red or yellow bell pepper, thinly sliced |
| 1/2 | lb | mushrooms, thinly sliced |
| Freshly ground black pepper, to taste | ||
| 2 | tsp | minced fresh basil |
| 2 | tsp | minced fresh Italian flat-leaf parsley |
| 4 | lrg | wheat tortillas |
| 4 | oz | mozzarella-style cheese or cheese, grated |

How to cook :
Makes 4 servings. LACTO/VEGANThese quick-fix snacks combine Italian flavors and Mexican tortillas to produce an American Classic: grilled cheese sandwiches.
You can use regular or low-hit dairy cheese, or any gratable cheese alternative.
Heat oil in a medium skillet over medium high heat.
Add onion; saute about 2 minutes.
Stir in garlic and bell pepper; saute 1 to 2 minutes more.
Add mushrooms; cook until vegetables are tender and mushrooms appear moist 2 to 3 minutes.
Season with black pepper.
Sprinkle in herbs; remove from heat.
Heat a heavy-bottomed, lightly greased griddle or skillet (large enough to accommodate a flat tortilla) over medium- high heat.
Place 1 tortilla in pan; spread 1/4 of vegetables over surface.
Sprinkle 1/4 of cheese over top.
Cook until cheese begins to melt.
Fold tortilla in half and cook until light brown on each side.
Repeat with remaining tortillas, sauteed vegetables and cheese.
Serve foldovers immediately, whole or cut into wedges.
Serves 4.VARIATIONS: Thinly sliced fennel bulb is another tasty addition to the saute.
To prepare foldovers in an oven, preheat oven to 400 degrees.
Lay tortillas flat on a baking sheet; spread 1/4 of vegetables on each and sprinkle 1/4 of cheese over top; bake just until cheese melts.
Fold and serve immediately.
Makes 4 servings.
